Legume Recipe That Will Spice Up Your Summer

 

I've been eating a vegan diet for almost two years now, and I have to say that it's been one of the best decisions I could have ever made. One of my favorite dishes to make is vegan adzuki bean meatballs.

 

This dish is so delicious, healthy, and easy to make! It has a simple ingredient list which includes 15oz of cooked adzuki beans, 1 cup of tomato sauce - 16oz can), 3 cloves garlic chopped up, 1 tsp sea salt + black pepper mix) 4 tbsp tamari sauce , 1/2 cup fine almond flour or oat flour. You can also add salt-free Italian seasonings if you want. To top it off just add some tamari sauce on

 

The lentils and oats also make these bars a better source of protein than many other breakfast bar recipes.

 

First, well have to get the ingredients for the bars ready which is easy enough. You'll need about 2 cups of cooked lentils, 1/4 cup raw sugar, 1/4 cup sea salt, 4 tbsp tamari sauce , 4 tbsp almond butter or ground almonds and 3 cups of rolled oats .

 

Once you have those ingredients ready: put them in your blender or food processor and blend them together until they become a fine flour. Then add them to a large bowl where you'll also add the rest of your wet ingredients like eggs, egg whites, vanilla extract and baking soda. Mix all those together really well

 

This recipe will take you about 45 minutes to make, but it's so worth it! You'll need 1 cup of black beans, 1 small or medium onion chopped up, 6 cloves garlic chopped up, 2 tbsp olive oil. You'll also need 3 cups of corn kernels and 3 cups of cooked rice ( ready in 5 minutes) . For the tomatoes you'll just need to dice them up and add them in. Add all these ingredients into a pot with 8 cups vegetable broth, salt and pepper for seasoning. Bring this mixture to a simmer for about 20 minutes tasting occasionally so that the flavors can integrate together without burning. In the last 5-10 minutes add cayenne pepper powder if your like me who loves spicy food!

 

 

This recipe is so easy to make and it's quick! You'll need a can of white beans, water, salt, pepper, onion powder, garlic powder and rosemary. Boil the broth with the spices until it has reduced by half. Now you'll need to add some chopped tomatoes and potatoes on top of that for extra flavor. At this point you can add any vegetables that have been on hand as well! One more ingredient that goes into this soup is some vegan parmesan cheese shreds which gives the soup a fantastic taste!

1/2 can white beans (drained) 2 cups vegetable broth two spoons Vegan Parmesan Shreds
